Resort's Executive Chef
has a passion for cooking
hef Cale Falk has seen it
all in the restaurant biz.
Starting out as a dishwasher, he's worked his way up
to Executive Chef at Indian
Wells Golf Resort where he puts
his passion into creating and
preparing fantastic food. We recently took him off the line for
few minutes and got him to talk
about his cooking career, guilty
pleasures, and the one food he
would eat for the rest of his life.
I was a very picky eater as a kid. I
didn't figure out I wanted to be
a chef until I was 19 or 20 when
I moved to Eureka, California.
Attention to detail is my greatest
culinary strength.
Executive Chef Cale Falk
I started working in a seafood
restaurant as a dishwasher and
moved to prep cook then to line
cook. Once I started expanding
my food palate I realized that all
this food I never tried was really
good! It was then I really started
to enjoy cooking and decided I
wanted to go to culinary school.
I probably say "No! No! No! No!
Start over!" way too much.
My favorite spice right
now is Togarashi. It's a
Japanese spice containing

chile flakes, orange rind,
seafood both raw and
